These spiced chicken burritos are the perfect autumnal treat! With generous sprinkles of cumin and cinnamon, you'll be surprised at how deliciously tasty these warm and spicy flavors can be when added to the white meat.
Ingredients (for 4 people):
For the chicken:
1 cup chicken breast pieces
1 onion (sliced)
4 cloves garlic (chopped)
1-inch ginger (chopped)
1 tbsp cumin powder
2 tsp cinnamon powder
2 tsp paprika powder
1/2 tsp turmeric powder
Salt and pepper (for seasoning)
For the beans:
1/2 cup large kidney beans (soaked and boiled)
1 onion (chopped)
1 tomato (chopped)
1 tbsp cumin powder
1 tbsp red chilli powder
1 tsp black pepper powder
Salt (for seasoning)
For the rice:
1/4 cup cooked rice
1 tbsp dried thyme leaves
1 tbsp paprika powder
Salt (for seasoning)
Other fillings:
1/2 red bell pepper (cut into slices)
1/2 yellow bell pepper (cut into slices)
1/2 onion (cut into slices)
1 tbsp cumin powder
1 tbsp paprika powder
Tomato salsa (optional)
Sour cream (optional)
Instructions:
Place kidney beans in a container along with 6 cups of hot water. Cover and cook at full power for 8 mins. Reduce the power by 50% and cook for a further 15 mins until the beans are tender.
Heat a skillet with oil and add the garlic. Sauté until it softens.
Add onions until they turn translucent, before adding the tomato and cooked beans.
Season with salt, and sprinkle in the cumin power, red chilli powder, and black pepper powder. Mix well.
Sauté until the mixture comes together. Once ready, allow to cool.
In a saucepan, heat a glug of oil. Add the ginger and garlic, and sauté until soft. Add the onions and sauté until they turn translucent.
Once the onions are well sauteed, sprinkle in the cumin, cinnamon, paprika, tumeric, and salt and pepper. Toss everything together and set aside to cool.
In a pan, add the rice along with the thyme leaves, paprika powder, and salt. Toss together.
Heat a pan with another glug of oil, and add 1/2 onion and bell peppers. Cook for 3 mins.
Sprinkle in the cumin powder, paprika powder, and salt. Toss everything together. The bell peppers should be soft but crunchy. Place in a bowl once done.
One the all the fillings are ready, warm tortillas for 2 min. either side. Place the tortilla on a sheet of aluminium and layer with rice. Then add the sautéed chicken, beans, other fillings and and extra creams or sauces, such as tomato salsa or sour cream.
Roll so that the aluminium covers the burrito, and twist at wither end.
