Chicken and Mushroom Quiche

Who doesn't love a quiche? This chicken and mushroom quiche is not only versatile, but super tasty too. It's the perfect autumnal treat and is extra delicious served with buttered baby potatoes and fresh green veggies.

Ingredients (for 6 people):

  • 10 oz. boneless, skinless chicken meat
  • 5 oz. mushrooms (diced)
  • 1 tbsp. butter 
  • 3 eggs
  • 3 oz. cheese of choice (shredded)
  • 1/4 cup flour
  • 5 oz. sour cream
  • 1.5 tbsp baking powder
  • Salt and pepper 
  • Bunch of parsley (for garnish)

Instructions:

  1. Preheat oven to 365°F.
  2. In a skillet, warm butter on medium-heat. Add the mushrooms and stir until liquid evaporates.
  3. Add chicken to skillet until it's cooked through. Season with salt and pepper, before setting aside to cool.
  4. Crack the eggs into a bowl and beat in the baking powder and season with salt. Add the sour cream and the flour. If the mixture is very liquidy, 1 tbsp. extra flour.
  5. The mixture should be homogeneous. Stir in the mushroom and chicken mixture so that it is well combined.
  6. Pour the combined mixtures into a springform pan and bake for 30 min.
  7. Remove from oven, sprinkle on the shredded cheese, and place in oven for an 30 seconds.
  8. Once ready, serve straight away and enjoy!
