Chicken and Ramen Noodle Soup

Whip this up in just 30 mins. and serve with a wedge of lime along with a sprinkling of cilantro — it's a hug in a bowl and the perfect recipe to keep any pesky lurgies at bay! 

Ingredients (for 4 people):

  • 1 tbsp vegetable oil
  • 1 red or green bell pepper, sliced thinly
  • 1 cup carrots, grated
  • 4 green onions, sliced
  • 1 tbsp curry paste (yellow or green)
  • 1/2 cup water
  • 1/2 cup coconut milk
  • 3.5 oz instant ramen or soba noodles
  • 8 oz. cooked chicken
  • 1 tbsp lime juice
  • 4 tbsp fresh cilantro (roughly chopped)
  • Roasted peanuts (to garnish)
  • Salt and pepper (for seasoning)

Instructions:

  1. Heat the vegetable oil in a deep saute pan or pot over medium heat. Add the bell pepper and sliced green onions (you can alternatively use kitchen shears to slice them in).
  2. Add the carrots, and saute the veggies for 1 min.
  3. Add the curry paste, and stir. Let cook for 1 min. longer. Season with salt and pepper.
  4. Add the water and coconut milk, then bring the mixture to a boil.
  5. Add the instant ramen (or soba) noodles. Cover and let boil for 4 minutes, stirring once (or cook for as long as the package instructs you). 
  6. Squeeze in the lime juice.
  7. Add the cooked chicken. You can cut it with kitchen shears or shred it.
  8. Add the cilantro. Stir and divide everything into 4 bowls. Season to taste, if necessary, and garnish with roasted peanuts.

  10. Serve the bowls hot with more lime juice or Sriracha, if desired.
