Cantonese Rice

Why spend money on take out when you can easily make it at home? Cantonese rice is an excellent way to use leftover rice and meat and is always tasty.

Ingredients (for 4 people):

  • 1 glass of rice
  • 2 eggs
  • 1/2 cup of peas
  • 1/2 cup of rice
  • Protein of your choice in pieces, such as, ham, chicken, shrimp, beef, pork or tofu
  • 1 tbsp soy sauce
  • Fresh chives

Instructions:

  1. Cook the rice according to package directions.
  2. In the meantime, crack the eggs and prepare a thin omelet in the pan. Fry for 3 min. on each side, transfer, to a plate and cut into cubes. 
  3. Cut the meat of your choice into pieces if it is already cooked. If you are using raw meat, cook it in the pan first and then cut it.
  4. When the rice is ready, add it to the pan with a little oil and fry it for 3 to 4 minutes. If you are using leftover rice, simply put the cold rice in the pan.
  5. Gradually add the rest of the ingredients you cut and mix.

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
