Ingredients:
4 cups pumpkin (diced and unpeeled)
3 cups sugar
2 tsp. ground cinnamon
1 cinnamon stick
Instructions
Peel the pumpkin and discard the seeds. Cut into cubes.
In a large pot, mix the combine the pumpkin, sugar, and cinnamon. Stir and cover with plastic wrap.
Bring to boil until the pumpkin is easily squashed with a wooden spoon. The mixture should be thick and a similar color to marmalade.
Spoon the hot jam into sterilized jars and close immediately.
