2. Turn it Into Jam

The perfect breakfast treat, this pumpkin and cinnamon jam really is special. It's golden, delicious, and tastes like autumnal sunshine in a jar. Here's how to make it:

Ingredients:

  • 4 cups pumpkin (diced and unpeeled) 
  • 3 cups sugar
  • 2 tsp. ground cinnamon
  • 1 cinnamon stick

Instructions

  1. Peel the pumpkin and discard the seeds. Cut into cubes.
  2. In a large pot, mix the combine the pumpkin, sugar, and cinnamon. Stir and cover with plastic wrap. 
  3. Bring to boil until the pumpkin is easily squashed with a wooden spoon. The mixture should be thick and a similar color to marmalade. 
  4. Spoon the hot jam into sterilized jars and close immediately.
