3. Make Pumpkin Pesto
Did you know that pumpkin seeds are super nutritious? So, if you have a heap of seeds leftover after your Jack-O'-Lantern fun, why not try making this pesto?
It's delicious tossed into pasta, spread over fish, or stirred into soup, and offers a deliciously nutty taste; perfect for an easy evening meal when you're too cold to cook something extravagant.
Ingredients:
- 1/4 cup pumpkin seeds
- 3 cloves garlic
- 5 black peppercorns
- 2 cups basil leaves
- 1/2 cup freshly-grated parmesan cheese
Instructions:
- In a small skillet, slightly toast the pumpkin seeds over medium heat. Shake every now and then until they become fragrant.
- Meanwhile, bash the garlic, salt, and peppercorns in a pestle and mortar to make a paste.
- Put the pumpkin seeds in the bowl of a food processor and pulse until they are a similar size to breadcrumbs. Add basil and the garlic mix, and drizzle 1/4 cup of olive oil over the ingredients. Pulse again.
- Scrape the pesto into a bowl, and stir in the parmesan. Season and add more salt if you wish.
- Enjoy!
