If you have leftover rice, meat, or veggies from last night's dinner, this is an ideal side dish. Throw everything together and you'll have a bowl of comfort in no time.
Ingredients (for 4 people):
1 cup cooked rice
1/2 chopped onion
1/2 cup frozen peas
1/2 cup left over meat (chicken, diced ham, beef, or gambas work well!)
1/2 cup left over veggies
1/2 cup sweetcorn (optional)
2 eggs
A pinch of cilantro (optional)
1/4 cup scallions (optional)
Instructions:
Add a glug of oil to a wok, and add the onion and frozen peas. Cook for 5 min. and stir occasionally.
Add the rice and continue to stir for and extra 3 min.
Using a wooden spoon, push all the rice and veggies toward the outside of the pan so that an empty hole is made in the middle of the mixture. If the pan seems dry, add a tiny drizzle of oil.
Directly break the 2 eggs into the center and stir until they begin to solidify.
Gradually stir the veggies and rice back into the middle of the pan, distributing the eggs througout the veggies and rice. The egg should be in small shreds.
When the eggs are totally cooked, drizzle the mixture with soy sauce.
Serve hot, and sprinkle with cilantro or scallions if desired.
