British Scones from 'The Crown'
This series about the British royals has been a ratings phenomenon, both for its captivating storylines and attention to detail regarding costumes, locations, and royal behavior.
If you want to enjoy the show like a royal, why not trying making these British scones? They really are fit for a Queen, as the recipe was Queen Elizabeth II's favorite.
Ingredients (for 12 scones):
- 3 1/2 cups flour
- 2 tbsp + 2 tsp baking powder
- Pinch of salt
- 7 tbsp butter (cut into small pieces)
- 1/2 cup sugar
- 3 eggs
- 3/4 cup buttermilk
- 2/3 cup sultanas or golden raisins
Instructions:
- Soak sultanas or raisins in hot water for 30 mins. Drain and set aside.
- In a bowl, mix the remaining dry ingredients. Add the butter and mix. Rub the ingredients between your forefingers and thumb so that a pie-like dough is created. It should be crumbly.
- In a seperate bowl, whisk two eggs before stirring in the buttermilk. Add to the crumbly mixture. Stir together before adding the sultanas or raisins. Gently knead the dough by hand until it's smooth.
- Lightly dust a countertop with flour. Flaten the dough onto the countertop so that it is 1-inch thick. Allow to rest for 45 mins. in the refrigerator.
- Using a round biscuit cutter, cut out the scones.
- Preheat the oven to 400°F. Whisk the third egg and gently egg wash the top of the scones with a pastry brush.
- Bake on baking sheets for around 12 to 15 minutes, give or take depending on your cutter size, or until light golden brown. Leave at least 1 1/2" of space between each scone. Cool on a wire rack before serving warm or at room temperature with jam and clotted cream.
