Aioli - Mediterranean

Nowadays you can find aioli prepared in myriad ways, but the original Mediterranean concoction is made of little more than olive oil, garlic and salt emulsified together to form a creamy sauce or condiment. Sometimes egg yolks are added for extra richness and texture. The name aioli actually translates to "garlic and oil" and is widely used in Eastern Spanish, Provincial French and Italian cuisines. Served as a condiment with everything, including fish, meats, potatoes, vegetables, fried foods, etc., it's a favorite for dipping fries or slathering on burgers and sandwiches in the US.

Ingredients:

  • 1 whole egg
  • 1 egg yolk
  • 4 garlic cloves, peeled
  • 2 tbsp olive oil
  • Pinch of salt
  • 3/4 cup (175g) olive oil
  • 1 tbsp lemon juice

Instructions:

  1. Add the whole egg, egg yolk, garlic cloves, olive oil and a pinch of salt to a blender or food processor. Gradually pour in the olive oil while mixing, until the sauce thickens.
  2. Add the lemon juice, and if necessary, add a bit more oil to reach the desired texture. Adjust the seasoning to taste.
  3. Serve immediately or let chill for a few hours in the fridge, to allow it to thicken up even more.
