Famous World Sauces to Try Before You Die

Toum - Lebanon

Lebanese food is renowned for its complex flavors and myriad condiments, such as this fluffy, intensely flavored garlic sauce. Traditionally made with only 4 ingredients, which you likely already have on hand, it makes a delightful dipping sauce or condiment for vegetables, grilled meats, fries, fresh pita/lavash bread—the list goes on and on. Just remember: a little goes a long way.

Ingredients:

  • 1 cup (130g) garlic cloves, peeled, halved and degermed
  • 2 tsp kosher salt
  • 1 lemon, juiced
  • 1 3/4 cup (210g) sunflower oil, divided
  • 4 to 6 tbsp ice water

Instructions:

  1. Place the garlic cloves into a food processor with the kosher salt. Pulse several times until the garlic is finely minced, scraping down the sides occasionally. Add the lemon juice and pulse a few more times, then scrape down the sides again.
  2. With the food processor running, slowly drizzle in 1/4 cup sunflower oil (30g). Add 1 tbsp ice water and scrape down the sides. Continue adding 1/4 cup sunflower oil and 1 tbsp ice water in intervals, scraping down the sides in between. Repeat the process until the correct texture is reached.
  3. The final sauce should have a light and fluffy texture and be completely smooth. Serve at room temperature.
