Shrimp

Cooked shrimp lasts up to four days in the fridge, but you can opt to freeze it if you want to make it last longer. The best part is that frozen shrimp defrosts quickly, so you can have it on hand for a multitude of delicious dishes as a low-calorie protein. On Sunday, prepare a large batch of shrimp the easy way, by baking them in the oven. Double this great recipe, flavored with butter garlic and lemon juice.

Leftover ideas: Pastas, sandwiches, pizza topper, soups, stews, jambalaya, salads, fried rice, tacos, casseroles, stir fries, shrimp and grits, etc.
