Homemade Sauerkraut

Sauerkraut is incredibly easy to make. All you need is a couple jars and the following ingredients!

Ingredients

  • 2 heads of green cabbage
  • 3 tbsp kosher salt
  • 1 tsp caraway seeds
  • 1 tsp juniper berries
  • Bay leaves, to taste

Instructions

  1. Wash the cabbage well and cut into thin strips.
  2. Place in a bowl and add the salt. Mix well, squeezing with your hands, then add the rest of the ingredients.
  3. Pack the cabbage into sealable jars. Fill the jar with water, making sure the cabbage is completely submerged.
  4. Seal the jar and wait a day before adding water and an extra teaspoon of salt if necessary. Seal again and allow the cabbage to ferment for 2 weeks.
