Banana Nut Oatmeal Pancakes

Adding oatmeal, banana, and chopped macadamia nuts to your pancake batter is an easy and delicious way to elevate your pancake recipe for a special occasion! These pancakes strike the perfect balance of sweet and nutty notes that Mom is sure to love. You can cook them using any non-stick oil or spray, but this recipe uses butter to make them slightly crispy and extra flavorful!

Ingredients (for about 10 pancakes):

  • 1 cup old-fashioned oats
  • 1 ripe banana, mashed
  • 2/3 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tbsp honey or maple syrup (optional, for sweetness)
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/3 cup chopped macadamia nuts
  • Toppings: sliced banana, chopped macadamia nuts, coconut flakes, honey or maple syrup
  • Extra butter for cooking

Instructions:

  1. In a mixing bowl, combine the old-fashioned oats and milk. Let it sit for about 5-10 min. to allow the oats to soften slightly.
  2. Add the mashed banana, egg, melted butter, honey or maple syrup (if desired), vanilla extract, cinnamon, and salt to the oat mixture. Stir until well combined.
  3. Gently fold the chopped nuts into the batter.
  4. Place a non-stick skillet or griddle over medium heat. Add a small amount of butter to coat the surface.
  5. Once the skillet is hot, pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Use the back of a spoon or ladle to spread the batter into a round shape if needed.
  6. Cook the pancakes for 2-3 min. on the first side, or until bubbles form on the surface and the edges start to set.
  7. Flip the pancakes using a spatula and cook for an additional 1-2 min. on the other side, or until golden brown and cooked through.
  8. Repeat with the remaining batter, adding more butter to the skillet between batches.
  9. Transfer the cooked pancakes to a plate. Serve them warm with your favorite toppings like banana slices, chopped nuts, coconut flakes, or maple syrup.
