Ingredients (for 6-8 roll-ups):
For the Crepes:
1 cup all-purpose flour
2 large eggs
1 cup milk
1/4 cup water
2 tbsp melted butter or oil
Pinch of salt
For the Filling:
1 cup broccoli florets, finely chopped
1 cup fresh spinach leaves, chopped
1/2 cup crumbled feta cheese
2 cloves garlic, minced
2 tbsp olive oil
Salt and pepper, to taste
Instructions:
In a blender or mixing bowl, combine the all-purpose flour, eggs, milk, water, melted butter or oil, and a pinch of salt.
Blend or whisk until the batter is smooth and well combined. Let the batter rest for about 10-15 min.
Heat a non-stick skillet or crepe pan over medium heat and lightly grease the skillet with butter or oil.
Pour a small ladleful of the crepe batter into the skillet, swirling it around to evenly coat the bottom.
Cook the crepe for about 1-2 min. on one side, or until the edges lift slightly and the bottom is lightly golden brown.
Carefully flip the crepe using a spatula and cook for an additional 1-2 min. on the other side.
Transfer the cooked crepe to a plate and repeat the process with the remaining batter.
In a skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 min. or until fragrant.
Add chopped broccoli florets to the skillet and sauté for 3-4 min. or until slightly tender.
Add chopped spinach to the skillet and cook for an additional 1-2 min. or until wilted.
Season the mixture with salt and pepper to taste. Remove the skillet from heat and let the mixture cool slightly. Once cooled, stir in crumbled feta cheese until well combined.
Place a cooked crepe on a flat surface and spoon a portion of the broccoli, spinach, and feta mixture onto the center of the crepe.
Roll up the crepe tightly to enclose the filling, and repeat the process. Arrange on a serving platter, and enjoy!
