Watermelon Salad

Nothing gives you that summertime feeling more than refreshing and juicy watermelon. Kick off your Memorial Day celebration with a salad that couldn’t be simpler! Let the flavors of summer speak for themselves in this watermelon salad. 

Ingredients (for 4-6 people):

  • 4 cups cubed seedless watermelon
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, thinly sliced or torn
  • 2 tbsp extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: balsamic glaze drizzle 

Instructions:

  1. Cut the seedless watermelon into bite-sized cubes, discarding the rind.
  2. Crumble the feta cheese into small pieces.
  3. Wash and thinly slice or tear the fresh mint leaves.
  4. In a large mixing bowl, combine the cubed watermelon, crumbled feta cheese, and sliced or torn mint leaves.
  5. Drizzle the extra-virgin olive oil over the watermelon, feta, and mint mixture.
  6. Season with a pinch of salt and freshly ground black pepper to taste.
  7. Gently toss all the ingredients together until well combined and evenly coated with the dressing.
  8. Cover the bowl with plastic wrap or transfer the salad to a serving dish.
  9. Chill the watermelon and feta salad in the refrigerator for about 15-30 min. before serving to allow the flavors to meld.
  10. Serve chilled, and enjoy!
