Ricotta Berry Struesel Tart

The creamy texture of ricotta paired with the bright berry flavors of this tart make it the perfect addition to your Memorial Day menu! It’s ideal for sharing with friends and family. Serve it with vanilla bean ice cream for the ultimate summer indulgence!

Ingredients (serves 6-8 pieces):

For the Tart Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1 egg yolk
  • 1-2 tbsp ice water

For the Ricotta Filling:

  • 1 cup whole milk ricotta cheese
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • Zest of 1 lemon

For the Berry Topping:

  • 1 1/2 cups fresh blueberries
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

For the Streusel Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup rolled oats
  • 2 tbsp brown sugar
  • 2 tbsp unsalted butter, chilled and diced

Instructions:

  1. In a food processor, pulse together the flour, sugar, and salt.
  2. Add the chilled diced butter and pulse until the mixture resembles coarse crumbs.
  3. Add the egg yolk and pulse again.
  4. Gradually add ice water, 1 tbsp at a time, until the dough comes together.
  5. Press the dough into a tart pan, making sure it covers the bottom and sides evenly. Prick the bottom with a fork. Chill the crust in the refrigerator while preparing the filling.
  6. Preheat your oven to 375°F (190°C).
  7. In a mixing bowl, combine the ricotta cheese, sugar, egg, vanilla extract, and lemon zest. Mix until smooth and well combined.
  8. In another bowl, gently toss together the blueberries, sugar, cornstarch, and lemon juice until the blueberries are coated evenly.
  9. Spread the ricotta filling evenly over the chilled tart crust.
  10. Arrange the blueberry mixture over the ricotta filling.
  11. In a small bowl, combine the flour, rolled oats, brown sugar, and chilled diced butter.
  12. Using your fingers or a pastry cutter, blend the mixture until crumbly and sprinkle the topping over the blueberry layer.
  13. Place the tart on a baking sheet and bake for 35-40 min. or until the crust is golden brown and the filling is set.
  14. Allow the tart to cool in the pan for about 10 min. before removing it from the tart pan.
  15. Serve warm or at room temperature, and enjoy!
