Mediterranean Tomato Oatmeal

Transport yourself to Southern Italy with this Mediterranean-inspired recipe that features flavorful tomatoes, indulgent cheese, and fresh herbs. Combine the rich flavors of Europe’s most beloved cuisines with the comforting texture of oatmeal! For extra flavor, sauté a clove of garlic in olive oil and add it to the oatmeal while it's cooking!

Ingredients (for 2 people):

For the oatmeal:

  • 1 cup rolled oats
  • 2 cups water or vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped (if packed in oil, drain first)
  • Salt and pepper to taste

For the toppings:

  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a medium saucepan, bring 2 cups of water or vegetable broth to a boil.
  2. Stir in the rolled oats and reduce the heat to low.
  3. Add the chopped sun-dried tomatoes to the oats.
  4. Simmer the oats, stirring occasionally, for about 5-7 min. or until they reach your desired consistency and the tomatoes have softened.
  5. Season with salt and pepper to taste. Keep warm while preparing the toppings.
  6. Grate the Parmesan cheese and chop the fresh parsley.
  7. Divide the cooked oatmeal between two bowls and sprinkle each bowl with grated Parmesan cheese. Garnish with chopped fresh parsley.
  8. Serve warm, and enjoy!
