Sesame and Carrot Blended Oats

Combining the natural sweetness of carrots with aromatic spices, this dish is delightfully balanced and packed with nutrients. It's a savory and flavorful breakfast or brunch option that's sure to satisfy your cravings!

Ingredients (for 2 servings):

For the base:

  • 1 cup rolled oats
  • 1 large carrot, peeled and chopped
  • 2 cups water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp ground ginger
  • 1 tbsp soy sauce

For the toppings:

  • 2 fried eggs
  • 2 tbsp sesame seeds
  • 2 green onions, chopped
  • Additional soy sauce (optional, for drizzling)

Instructions:

  1. In a medium pot, combine the rolled oats, chopped carrot, water, salt, black pepper, ground cumin, garlic powder, and ground ginger.
  2. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for about 10-15 min. or until the oats and carrots are tender and the mixture has thickened.
  3. Using an immersion blender or a regular blender, blend the mixture until smooth and creamy. If using a regular blender, be careful as the mixture will be hot. You may need to blend in batches.
  4. While the oatmeal is cooking, heat a small amount of oil in a frying pan over medium heat.
  5. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, or cook to your desired doneness.
  6. Toast the sesame seeds in a dry pan over medium heat until golden brown, stirring continuously to prevent burning.
  7. Divide the blended oatmeal into two bowls and top each bowl with a fried egg.
  8. Sprinkle each serving with toasted sesame seeds and chopped green onion.
  9. Drizzle with additional soy sauce, if desired.
  10. Serve immediately while hot, and enjoy!
