Oats Khichdi

Oats Khichdi is a traditional Indian dish that is a nutritious blend of rice and lentils, but it can also be the perfect oat-based dish! This khichdi recipe is bursting with flavorful, aromatic ingredients and seasonings making it a comfort food you will crave time and time again.  Get creative with your favorite flavors and bring this classic dish to your breakfast table! Khichdi is often enjoyed with a squeeze of lemon juice for a bit of tanginess.

Ingredients (for 2 people):

  • 1/2 cup rolled oats
  • 1/4 cup split yellow lentils, rinsed
  • 1 tbsp ghee or oil
  • 1/2 tsp cumin seeds
  • 1 small onion, finely chopped
  • 1 small tomato, chopped
  • 1/2 tsp ginger-garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp red chili powder (adjust to taste)
  • 1 small carrot, diced
  • 1/2 cup peas (fresh or frozen)
  • Salt to taste
  • 3 cups water
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Rinse the lentils thoroughly and set aside and chop the vegetables and set aside.
  2. In a medium pot, heat the ghee or oil over medium heat.
  3. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
  4. Then, add the chopped onion and sauté until it turns golden brown.
  5. Add the ginger-garlic paste and sauté for another minute.
  6. Next, add the chopped tomato and cook until it softens.
  7. Stir in the turmeric powder, ground cumin, ground coriander, and red chili powder. Cook for 1-2min. until the spices are well combined.
  8. Add the diced carrot and peas, and cook for 2-3min.
  9. Add the rinsed lentils and rolled oats, stirring to combine with the spices and vegetables.
  10. Pour in the water and add salt to taste.
  11. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 min., stirring occasionally, until the oats and dal are cooked and the mixture reaches a porridge-like consistency.
  12. Once cooked, stir the khichdi and adjust the consistency by adding a little more water if needed. Garnish with fresh cilantro.
  13. Serve warm, optionally with a dollop of ghee on top and a side of yogurt. Enjoy!
