Braised Short Ribs

Slow-cooked to perfection in a savory sauce, these braised short ribs become incredibly tender and fall off the bone! This hearty classic dish makes the perfect centerpiece for an unforgettable Father’s Day Meal. Serve with mashed potatoes, polenta, or crusty bread to soak up the delicious sauce!

Ingredients (for 4 people):

  • 4 bone-in beef short ribs (about 1 lb each)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup red wine
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves

Instructions:

  1. Preheat the oven to 325°F (163°C).
  2. Season the short ribs generously with salt and pepper.
  3. In a large cast iron pan or Dutch oven, heat the olive oil over medium-high heat.
  4. Sear the short ribs on all sides until they are browned, about 3-4 min. per side. Remove the short ribs from the pan and set aside.
  5. In the same pan, add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 min.
  6. Add the tomato paste and cook for another 2 min. Stir to combine.
  7. Pour in the red wine to deglaze the pan, scraping up any browned bits from the bottom.
  8. Add the beef broth, diced tomatoes, rosemary, thyme, and bay leaves. Stir to combine.
  9. Return the short ribs to the pan, ensuring they are submerged in the liquid, and bring the mixture to a simmer.
  10. Cover the pan with a lid or aluminum foil and transfer it to the preheated oven.
  11. Braise the short ribs in the oven for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  12. Remove the short ribs from the oven and let them rest in the sauce for 10-15 min. Discard the rosemary, thyme, and bay leaves.
  13. Serve the short ribs with the braising liquid and vegetables, garnished with fresh herbs if desired. Enjoy!
