Quick & Easy Summer Salads to Beat the Heat

Crunchy kale salad

This superfood-charged salad can be served as a side, or you can easily add your favorite protein to make it a main. Made with just a handful of ingredients, it's crunchy and satisfying for any occasion.

Ingredients for 4 servings

  • 1 bunch kale, chopped with stems removed
  • 4 oz. (110 g) fresh goat cheese, crumbled
  • 4 radishes with stems removed, thinly sliced
  • 1/3 cup (30 g) walnuts, shelled and roughly chopped
  • 1/2 cup (60 g)  dried cranberries, roughly chopped

Dressing

  • 3 tbsp olive oil
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 tsp honey
  • 1/4 tsp salt
  • Freshly cracked black pepper to taste

Instructions

  1. Combine all the salad ingredients in a medium serving bowl.
  2. In a small bowl, whisk together the dressing ingredients until smooth and fully combined. Taste and adjust the seasoning, if necessary.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
