Ingredients (for one 12” flatbread):

For the Flatbread:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tbsp olive oil
  • 3/4 cup warm water

For the Toppings:

  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, sliced or torn into pieces
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Balsamic glaze for drizzling (optional)

Instructions:

  1. In a large bowl, combine the flour, salt, and baking powder. Add the olive oil and warm water, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5 min. until smooth and elastic. Cover with a damp cloth and let it rest for 30 min.
  3. Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven while it heats.
  4. Roll the rested dough into a large thin oval or round shape, about 12 inches in diameter.
  5. In a small bowl, mix the olive oil and minced garlic. Brush this mixture over the rolled-out dough.
  6. Evenly distribute the cherry tomatoes and fresh mozzarella over the dough. Season with salt and pepper.
  7. Transfer the flatbread to the preheated pizza stone or a baking sheet. Bake for 10-12 min. or until the crust is golden and the cheese is bubbly and slightly browned.
  8. Remove the flatbread from the oven and immediately sprinkle with the fresh basil leaves.
  9. Drizzle with balsamic glaze if desired. Slice and serve warm by the pool!
