Ingredients (for 2-4 servings):

  • 1 medium delicata squash, halved, seeded, and sliced into 1/2-inch thick rings
  • 1 cup cooked quinoa
  • 1 cup canned chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 cups chopped kale (stems removed)
  • 1 tbsp lemon juice
  • 1/2 cup hummus
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the delicata squash rings on a baking sheet lined with parchment paper. Drizzle with half of the olive oil and season with salt and black pepper.
  3. Roast in the preheated oven for 20-25 min. until tender and golden brown.
  4. While the squash is roasting, spread the chickpeas on another baking sheet. Drizzle with the remaining olive oil, smoked paprika, garlic powder, salt, and black pepper.
  5. Roast in the oven for 20-25 min. or until crispy, shaking the pan halfway through.
  6. In a large skillet over medium heat, add a splash of water and the chopped kale. Cook for 5-7 min. until wilted and tender.
  7. Drizzle with lemon juice and season with salt and black pepper.
  8. Divide the cooked quinoa between two bowls.
  9. Arrange the roasted delicata squash, cooked kale, and roasted chickpeas on top of the quinoa. Add a dollop of hummus to each bowl.
