Ingredients (for 4 sandwiches):
2 cups cooked chicken, diced or shredded
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
1 tbsp Dijon mustard
1 celery stalk, finely chopped
1/4 cup red onion, finely chopped
1/4 cup dried cranberries or grapes, halved
1/4 cup chopped pecans or walnuts (optional)
1 tbsp fresh parsley, chopped
Salt and black pepper to taste
4 croissants, sliced in half
Fresh arugula (optional)
Instructions:
In a large bowl, combine the mayonnaise, Greek yogurt, and Dijon mustard. Mix until well blended.
Add the diced chicken, celery, red onion, dried cranberries or grapes, chopped nuts (if using), and fresh parsley. Mix until all the ingredients are evenly coated with the dressing.
Season with salt and black pepper to taste. Adjust the seasoning as needed.
Slice the croissants in half horizontally.
Place a a layer of arugula (if using) on the bottom half of each croissant.
Spoon a generous portion of the chicken salad onto the lettuce. Top with the other half of the croissant.
Serve the sandwiches immediately, or wrap them in parchment paper and refrigerate until ready to enjoy.
