Ingredients (for 6-8 servings):
6 ears of corn, husked
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup cotija cheese, crumbled (or feta cheese)
1/2 cup fresh cilantro, chopped
2 cloves garlic, minced
1 jalapeño, finely chopped (optional, for heat)
1 tsp chili powder
1 tsp smoked paprika
2 tbsp lime juice (about 1-2 limes)
Salt and black pepper to taste
Instructions:
Preheat your grill to medium-high heat.
Grill the corn, turning occasionally, until it is charred and cooked through, about 10-12 min.
Remove the corn from the grill and let it cool slightly.
Using a sharp knife, carefully cut the kernels off the cobs and transfer them to a large bowl.
In a small bowl, whisk together the mayonnaise, sour cream, lime juice, minced garlic, chili powder, and smoked paprika until well combined.
Add the crumbled cotija cheese, chopped cilantro, and jalapeño (if using) to the bowl with the corn.
Pour the dressing over the corn mixture and toss until everything is evenly coated.
