Ingredients (for 6-8 servings):
1 lb ground beef
1 onion, diced
2 carrots, diced
3 cloves garlic, minced
1 can (28 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
2 tbsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp cayenne pepper (optional for heat)
Salt and pepper to taste
1 cup beef broth
2 tbsp olive oil
Instructions:
Heat olive oil in a 6-quart Dutch oven over medium heat. Add diced onions, garlic, and carrots. Sauté for 5-7 min. until softened.
Add the ground beef and cook until browned, breaking it apart with a wooden spoon.
Stir in chili powder, cumin, paprika, cayenne, salt, and pepper, cooking for 1 minute to release the spices’ aroma.
