Chili con Carne

This hearty and flavorful chili is a comforting blend of ground beef, kidney beans, carrots, and tomatoes, simmered with bold spices in a 6-quart Dutch oven. Perfect for cozy evenings, this one-pot meal is the perfect way to serve a crowd and tastes even better as leftovers!

Ingredients (for 6-8 servings):

  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional for heat)
  • Salt and pepper to taste
  • 1 cup beef broth
  • 2 tbsp olive oil

Instructions:

  1. Heat olive oil in a 6-quart Dutch oven over medium heat. Add diced onions, garlic, and carrots. Sauté for 5-7 min. until softened.
  2. Add the ground beef and cook until browned, breaking it apart with a wooden spoon.
  3. Stir in chili powder, cumin, paprika, cayenne, salt, and pepper, cooking for 1 minute to release the spices’ aroma.
  4. Add the diced tomatoes, kidney beans, and beef broth. Stir everything together.
  5. Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for 45 min. to 1 hour, stirring occasionally.
  6. Serve hot with toppings like shredded cheese, sour cream, or chopped cilantro if desired.
