Shepherd's Pie is a comforting classic that features a savory mixture of seasoned ground red meat, carrots, peas, and onions, all topped with creamy mashed potatoes and baked until golden brown. This hearty dish serves as the perfect way to welcome autumn with a cozy family dinner.
Ingredients (for 6-8 servings):
1 lb ground beef or lamb
1 onion, diced
2 carrots, peeled and diced
1 cup frozen peas
3 cloves garlic, minced
1 tbsp tomato paste
1 cup beef or chicken broth
1 tsp Worcestershire sauce
1 tsp dried thyme
Salt and pepper to taste
4 cups mashed potatoes (prepared with butter and cream)
2 tbsp olive oil
Instructions:
Preheat your oven to 375°F.
Heat olive oil in a 6-quart Dutch oven over medium heat. Add the diced onions and carrots, and cook for 5-7 min. until softened.
Add the ground beef or lamb and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if needed.
Stir in the minced garlic and tomato paste, cooking for 1 min. Add the broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 5 min. until the mixture thickens slightly. Stir in the frozen peas.
Spread the meat mixture evenly in the bottom of the Dutch oven. Spoon the mashed potatoes on top, spreading them out with a spatula.
Bake in the preheated oven for 25-30 min. or until the mashed potatoes are golden brown and the edges are bubbling.
