Chicken Cacciatore
Chicken Cacciatore is a flavorful Italian dish where chicken thighs are simmered with tomatoes, bell peppers, olives, and a blend of aromatic herbs in a rich, savory sauce. This Chicken Cacciatore is a hearty and satisfying dish with a delicious blend of savory and tangy flavors, perfect for pairing with pasta, rice, or crusty bread.
Ingredients (for 4-6 servings):
- 4-6 chicken thighs (bone-in, skin-on or skinless)
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper (red or green), sliced
- 1 cup black olives, pitted
- 1 can (28 oz) diced tomatoes
- 1/2 cup dry white wine (optional, can replace with chicken broth)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions:
- Preheat your oven to 350°F.
- Heat olive oil in a 6-quart Dutch oven over medium-high heat. Season the chicken thighs with salt and pepper and brown them in the hot oil, about 5 min. per side. Remove the chicken and set aside.
- In the same Dutch oven, add the diced onion and bell pepper. Sauté for 5-7 min. until softened.
- Stir in the minced garlic and cook for an additional minute. Add the diced tomatoes, olives, white wine (or chicken broth), oregano, basil, and rosemary. Stir to combine.
- Return the browned chicken thighs to the Dutch oven, nestling them into the sauce. Bring to a simmer.
- Cover the Dutch oven and transfer it to the preheated oven. Bake for 35-45 min. or until the chicken is cooked through and tender.
- Garnish with fresh parsley before serving.
