Chicken Cacciatore

Chicken Cacciatore is a flavorful Italian dish where chicken thighs are simmered with tomatoes, bell peppers, olives, and a blend of aromatic herbs in a rich, savory sauce. This Chicken Cacciatore is a hearty and satisfying dish with a delicious blend of savory and tangy flavors, perfect for pairing with pasta, rice, or crusty bread.

Ingredients (for 4-6 servings):

  • 4-6 chicken thighs (bone-in, skin-on or skinless)
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (red or green), sliced
  • 1 cup black olives, pitted
  • 1 can (28 oz) diced tomatoes
  • 1/2 cup dry white wine (optional, can replace with chicken broth)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

  1. Preheat your oven to 350°F.
  2. Heat olive oil in a 6-quart Dutch oven over medium-high heat. Season the chicken thighs with salt and pepper and brown them in the hot oil, about 5 min. per side. Remove the chicken and set aside.
  3. In the same Dutch oven, add the diced onion and bell pepper. Sauté for 5-7 min. until softened.
  4. Stir in the minced garlic and cook for an additional minute. Add the diced tomatoes, olives, white wine (or chicken broth), oregano, basil, and rosemary. Stir to combine.
  5. Return the browned chicken thighs to the Dutch oven, nestling them into the sauce. Bring to a simmer.
  6. Cover the Dutch oven and transfer it to the preheated oven. Bake for 35-45 min. or until the chicken is cooked through and tender.
  7. Garnish with fresh parsley before serving.
