Chicken and Dumplings

This classic comfort dish features juicy chicken pieces simmered with vegetables in a rich broth, all topped with fluffy, homemade dumplings. This Chicken and Dumplings recipe is a comforting classic, with tender chicken and fluffy dumplings making it a perfect dish for chilly evenings.

Ingredients (for 4-6 servings):

For the Soup:

  • 1 whole chicken (about 4-5 lbs), cut into pieces
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 cup milk
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup cold butter, cut into small pieces
  • 1 cup milk

Instructions:

  1. Heat olive oil in a 6-quart Dutch oven over medium heat. Add diced onions, carrots, and celery, and cook for 5-7 min. until softened.
  2. Stir in the minced garlic and cook for another minute. Add the chicken pieces and cook until slightly browned.
  3. Pour in the chicken broth, add the thyme and rosemary, and season with salt and pepper. Bring to a simmer.
  4. Cover the Dutch oven and simmer for 30-40 min. or until the chicken is cooked through and tender. Remove the chicken pieces and shred them, discarding the bones. Return the shredded chicken to the pot, and stir in the frozen peas.
  5. For the dumplings, in a medium bowl, whisk together flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.
  6. Drop spoonfuls of the dumpling batter on top of the simmering chicken mixture. Cover and cook for 15-20 min. or until the dumplings are fluffy and cooked through.
  7. Serve hot, garnished with fresh parsley if desired.
