Menemen is a beloved Turkish breakfast dish that features fluffy scrambled eggs cooked with ripe tomatoes, green peppers, and spices. This flavorful dish is both comforting and hearty, often enjoyed with crusty bread for dipping. Quick to prepare and bursting with fresh flavors, Menemen is a perfect way to start your day or enjoy a light meal at any time.
Ingredients (for 4 servings):
4 large eggs
2 medium tomatoes, diced
1 green bell pepper, diced (or 1-2 green chilies for heat)
1 small onion, finely chopped (optional)
2 tbsp olive oil or butter
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
Fresh parsley or cilantro (for garnish, optional)
Instructions:
In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion (if using) and sauté until translucent. Then add the diced green pepper and cook for another 2-3 min. or until softened.
Stir in the diced tomatoes, red pepper flakes (if using), salt, and pepper. Cook for about 5-7 min. until the tomatoes break down and create a saucy mixture.
Reduce the heat to low, and crack the eggs directly into the skillet. Gently stir to combine with the tomato mixture, cooking until the eggs are just set but still creamy, about 3-5 min. Be careful not to overcook them.
Remove the skillet from the heat and garnish with fresh parsley or cilantro if desired. Serve Menemen hot, accompanied by crusty bread for dipping.
