Gallo Pinto (Costa Rica and Nicaragua) 

Gallo Pinto is a traditional dish from Costa Rica and Nicaragua, known for its simple yet delicious combination of rice and black beans, seasoned with spices and herbs. This hearty and flavorful mix is often served with fried eggs and can be complemented by cheese, plantains, or fresh avocado. A staple breakfast in both countries, Gallo Pinto is not only nutritious but also a comforting way to start the day.

Ingredients (for 4 servings):

  • 2 cups cooked white or brown rice (preferably day-old)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp Worcestershire sauce (or Salsa Lizano for a traditional taste)
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 4 large eggs
  • Optional toppings: cheese, fried plantains, or avocado

Instructions:

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and red bell pepper, cooking until softened, about 3-4 min. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the cooked rice and black beans to the skillet. Stir in the ground cumin, Worcestershire sauce, salt, and pepper. Cook for about 5-7 min., stirring occasionally, until heated through and well combined.
  3. In a separate pan, fry the eggs to your liking—sunny side up or over easy works well.
  4. Divide the Gallo Pinto among plates, topping each serving with a fried egg. If desired, add cheese, fried plantains, or sliced avocado as additional toppings.
