Pap and Wors (South Africa)
Pap and Wors is a traditional South African breakfast that brings together the savory goodness of boerewors, a flavorful sausage made from a blend of beef and spices, with pap, a hearty maize porridge. Often served with a side of tomato relish, this dish is not only filling but also reflects the rich culinary heritage of South Africa.
Ingredients (for 4 servings):
For the Boerewors:
- 1 lb boerewors sausage (store-bought or homemade)
For the Pap:
- 1 cup cornmeal
- 4 cups water
- 1/2 tsp salt
- 1 tbsp butter (optional)
For the Tomato Relish (optional):
- 2 medium tomatoes, chopped
- 1 small onion, chopped
- 1 tbsp vegetable oil
- Salt and pepper to taste
- 1/2 tsp sugar (optional)
Instructions:
- Preheat a skillet over medium heat. Cook the boerewors for about 15-20 min., turning occasionally until browned and cooked through. If using a skillet, you can slice the sausage into coils for easier handling.
- In a saucepan, bring the water and salt to a boil. Gradually whisk in the maize meal, stirring continuously to prevent lumps. Reduce the heat to low, cover, and cook for about 10-15 min., stirring occasionally until the pap is thick and creamy. If desired, stir in butter for extra richness.
- In a small skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 min. Stir in the chopped tomatoes and cook for another 5 minutes until the mixture thickens. Season with salt, pepper, and sugar, if using.
- Spoon the pap into shallow bowls, top with slices of boerewors, and drizzle with tomato relish if desired.
