  • 1 cup jasmine rice (or other white rice)

  • 2 salted eggs, halved (optional)
  • Pickled vegetables (such as radish or mustard greens)
  • Fried dough sticks (youtiao), sliced (optional)
  • Soy sauce (for drizzling)
  • Chopped green onions (for garnish)
  • Sesame oil (for drizzling)

Instructions:

  1. Rinse the rice under cold water until the water runs clear. In a large pot, combine the rice and water (or broth). Bring to a boil, then reduce the heat to low. Simmer for about 1 to 1.5 hours, stirring occasionally, until the rice breaks down and the mixture becomes thick and creamy. Add salt to taste.
  2. While the congee is simmering, prepare any desired toppings. Slice the salted eggs in half, chop pickled vegetables, and slice fried dough sticks into pieces.
  3. Ladle the congee into bowls and drizzle with soy sauce and a few drops of sesame oil. Top with salted eggs, pickled vegetables, and fried dough sticks. Garnish with chopped green onions.
