These vegan tacos are loaded with spiced black beans, roasted sweet potatoes, and fresh salsa, making them a flavorful and satisfying plant-based meal. Perfect for taco night, these soft tortillas are packed with a delicious mix of textures and tastes, offering a healthy, vibrant dinner option that's easy to prepare.
Ingredients (for 8 tacos):
2 medium sweet potatoes, peeled and diced
1 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
Salt and pepper to taste
1 can (15 oz) black beans, drained and rinsed
1 tsp chili powder
8 small soft tortillas
1 avocado, sliced (optional)
1/2 cup salsa (store-bought or homemade)
Fresh cilantro for garnish (optional)
Instructions:
Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes with olive oil, cumin, smoked paprika, salt, and pepper. Spread them on a baking sheet and roast for 20-25 min. until tender and lightly browned.
While the sweet potatoes roast, place the black beans in a small saucepan over medium heat. Add the chili powder, a pinch of salt, and a splash of water. Cook for 5-7 min. stirring occasionally until heated through and well seasoned.
Warm the tortillas in a dry skillet or microwave. Fill each tortilla with a spoonful of black beans, a handful of roasted sweet potatoes, a few slices of avocado, and a drizzle of salsa.
Garnish with fresh cilantro if desired, and serve immediately.
