While technically a fruit, avocado makes the perfect base in this creamy and refreshing ice cream treat. Lightly sweetened and made with rich coconut milk, this dairy-free treat offers a smooth, luscious texture with a hint of tropical flavor. Perfect for a satisfyingly healthy dessert!
Ingredients (for 4 servings):
2 ripe avocados
1 can (13.5 oz) full-fat coconut milk
¼ cup maple syrup (or sweetener of choice)
1 tsp vanilla extract
1 tbsp lime juice (optional, for brightness)
Pinch of salt
Instructions:
Scoop out the avocado flesh and place it in a blender or food processor.
Add the coconut milk, maple syrup, vanilla extract, lime juice (if using), and a pinch of salt. Blend until smooth and creamy.
Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions, or pour it into a freezer-safe container.
If using the freezer method, cover and freeze for 4-6 hrs. while stirring every 30 min. during the first 2 hrs. to prevent ice crystals from forming.
Let the ice cream sit at room temperature for a few min. before scooping and serving.
