Sweet Potato Brownies

Sweet potatoes are one of the most versatile vegetables when it comes to baking, and these brownies are not only rich, and fudgy, but they are packed with nutrients! Mashed sweet potatoes add natural sweetness and moisture, while cocoa powder and dark chocolate create a deep, indulgent flavor. 

Ingredients (for 12 brownies):

  • 1 cup mashed sweet potatoes
  • ½ cup cocoa powder
  • ½ cup coconut sugar
  • ½ cup almond butter (or any nut butter)
  • ¼ cup dark chocolate, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, mix the mashed sweet potatoes, cocoa powder, coconut sugar, almond butter, melted dark chocolate, eggs, and vanilla extract until smooth and well combined.
  3. Add the baking powder and salt, and stir until just incorporated.
  4. Pour the batter into the prepared baking pan and spread it evenly with a spatula.
  5. Bake for 25-30 min. or until a toothpick inserted into the center comes out mostly clean.
  6. Allow the brownies to cool completely in the pan before slicing into squares.
