Sweet Potato Pie

A Southern classic, this sweet potato pie recipe features a smooth and creamy filling made from mashed sweet potatoes, perfectly spiced with cinnamon and nutmeg. Baked in a buttery, flaky pie crust, this pie offers a comforting and nostalgic dessert that's perfect for any occasion.

Ingredients (for 8 servings):

  • 1 ½ cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • ½ cup coconut sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ½ cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 1 unbaked 9-inch pie crust (store-bought or homemade)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, beat together the mashed sweet potatoes, coconut sugar, and melted butter until smooth.
  3. Add the eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined and the filling is smooth.
  4. Pour the sweet potato filling into the unbaked pie crust, spreading it evenly.
  5. Bake for 50-55 min., or until the center is set and a knife inserted into the pie comes out clean.
