Sweet Potato Pie
A Southern classic, this sweet potato pie recipe features a smooth and creamy filling made from mashed sweet potatoes, perfectly spiced with cinnamon and nutmeg. Baked in a buttery, flaky pie crust, this pie offers a comforting and nostalgic dessert that's perfect for any occasion.
Ingredients (for 8 servings):
- 1 ½ cups mashed sweet potatoes (about 2 medium sweet potatoes)
- ½ cup coconut sugar
- ½ cup unsalted butter, melted
- 2 large eggs
- ½ cup evaporated milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 1 unbaked 9-inch pie crust (store-bought or homemade)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, beat together the mashed sweet potatoes, coconut sugar, and melted butter until smooth.
- Add the eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined and the filling is smooth.
- Pour the sweet potato filling into the unbaked pie crust, spreading it evenly.
- Bake for 50-55 min., or until the center is set and a knife inserted into the pie comes out clean.
- Let the pie cool completely on a wire rack before serving.
