Chocolate Chip Zucchini Cookies

Chocolate chip zucchini cookies are soft, chewy, and filled with melty chocolate chips for a delicious and sneaky way to enjoy your veggies! The grated zucchini adds moisture without overpowering the flavor, while the dark chocolate chips provide rich sweetness in every bite—a perfect balance of indulgence and wholesome ingredients.

Ingredients (for 12 cookies):

  • 1 cup grated zucchini (squeezed to remove excess moisture)
  • 1 ¼ cups all-purpose flour
  • ½ cup coconut sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup dark chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, cream the softened butter and coconut sugar until light and fluffy. Add the egg and vanilla extract, and beat until well combined.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined. Gently fold in the grated zucchini and dark chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 min. or until the edges are set and the cookies are soft in the center.
  7. Allow the cookies to cool on the baking sheet for 5 min., then transfer them to a wire rack to cool completely.
