Pumpkin Cheesecake Bars

These pumpkin cheesecake bars combine the rich, spiced flavor of a pumpkin base with the creamy decadence of a cheesecake swirl on top. Baked into easy-to-serve bars, this dessert is perfect for fall gatherings or any time you want a crowd-pleasing treat with a twist.

Ingredients (for 12 bars):

  • 1 cup pumpkin puree
  • ¾ cup all-purpose flour
  • ½ cup coconut sugar
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp baking powder
  • Pinch of salt
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 large egg
  • ½ tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. For the pumpkin base, mix the pumpkin puree, coconut sugar, melted butter, egg, and vanilla extract in a bowl until smooth. In another bowl, whisk together the flour, cinnamon, ginger, nutmeg, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until combined.
  3. Pour the pumpkin mixture into the prepared baking dish, spreading it evenly with a spatula.
  4. In a separate bowl, beat together the softened cream cheese, powdered sugar, egg, and vanilla extract until smooth.
  5. Drop spoonfuls of the cream cheese mixture over the pumpkin base and use a knife to gently swirl the two layers together, creating a marbled effect.
  6. Bake for 25-30 min. or until the cheesecake swirl is set and a toothpick inserted into the center comes out clean.
  7. Allow the bars to cool completely in the pan before slicing into squares.
