Ingredients (for 12 servings):
1 ½ cups all-purpose flour
1 cup pumpkin puree
½ cup unsalted butter, melted
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg
¼ tsp baking soda
½ tsp baking powder
¼ tsp salt
2 tbsp granulated sugar
1 tsp cinnamon
Instructions:
Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking pan.
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the pumpkin puree, eggs, and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the flour, cinnamon, ginger, nutmeg, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Pour the batter into the prepared baking pan, spreading it evenly.
In a small bowl, mix together the granulated sugar and cinnamon for the topping. Sprinkle the cinnamon sugar mixture evenly over the top of the batter.
Bake for 25-30 min. or until a toothpick inserted in the center comes out clean. Allow the blondies to cool in the pan before cutting into squares.
