Pumpkin bread pudding is a warm, comforting dessert that combines cubed bread soaked in a rich pumpkin custard flavored with warm spices like cinnamon and nutmeg. Baked to golden perfection and served with a drizzle of caramel or whipped cream, this fall-inspired treat is the ultimate cozy dessert for autumn evenings.
Ingredients (for 8 servings):
6 cups cubed day-old bread (preferably French or brioche)
1 ½ cups pumpkin puree
1 ½ cups whole milk
½ cup coconut sugar
3 large eggs
1 tsp vanilla extract
1 tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg
¼ tsp allspice
Pinch of salt
Instructions:
Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
In a large bowl, whisk together the pumpkin puree, milk, coconut sugar, eggs, vanilla extract, cinnamon, ginger, nutmeg, allspice, and salt until smooth.
Add the cubed bread to the bowl, gently folding to ensure all the bread is soaked in the pumpkin custard mixture.
Pour the bread mixture into the prepared baking dish and spread it evenly.
Bake for 40-45 min. or until the top is golden and the custard is set. Let it cool slightly before serving.
Serve warm with a drizzle of caramel sauce or a dollop of whipped cream.
