Ingredients (for 12 doughnuts):
For the Doughnuts:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground allspice
¼ tsp salt
1 large egg
½ cup brown sugar, packed
¼ cup unsalted butter, melted
½ cup apple cider (reduced to ¼ cup)
¼ cup buttermilk
1 tsp vanilla extract
For the Coating:
½ cup granulated sugar
1 tsp ground cinnamon
3 tbsp unsalted butter, melted
Instructions:
Preheat the oven to 350°F (175°C) and grease a doughnut pan.
In a saucepan, simmer the apple cider over medium heat until it reduces to ¼ cup, about 10-15 min. Let cool slightly.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
In a large bowl, whisk the egg and brown sugar until smooth. Stir in the melted butter, reduced apple cider, buttermilk, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Spoon the batter into the greased doughnut pan, filling each cavity about ¾ full. Bake for 10-12 min., or until a toothpick inserted into a doughnut comes out clean. Let cool for 5 min., then remove from the pan.
While the doughnuts cool, mix the granulated sugar and cinnamon in a small bowl. Brush the doughnuts with melted butter and coat them in the cinnamon sugar mixture.
