Ingredients (for 12 servings):
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tbsp unsalted butter, melted
For the Filling:
24 oz cream cheese, softened
¾ cup granulated sugar
3 large eggs
1 tsp vanilla extract
½ cup sour cream
For the Topping:
3 medium apples, peeled, cored, and sliced
¼ cup unsalted butter
¼ cup brown sugar, packed
½ tsp cinnamon
½ cup caramel sauce
Instructions:
Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan. Bake for 8-10 min. then set aside to cool.
In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until fully incorporated.
Pour the cheesecake filling over the baked crust and smooth the top.
Bake the cheesecake for 50-55 min. or until the center is just set. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hr. to cool gradually. Then refrigerate for at least 4 hrs. or overnight.
In a large skillet, melt the butter over medium heat. Add the apple slices, brown sugar, and cinnamon. Cook for 5-7 min. until the apples are tender and caramelized. Remove from heat and let cool slightly.
Before serving, spread the caramel sauce over the chilled cheesecake and arrange the caramelized apple slices on top.
