Pumpkin Soup

Pumpkin soup is a rich and nourishing dish that blends pumpkin purée with vegetable broth, garlic, and coconut milk for a creamy, flavorful experience. This easy-to-prepare soup is perfect for a cozy weeknight meal. Top it off with a drizzle of coconut milk and your favorite seeds for added texture and flavor.

Ingredients (for 4 servings):

  • 2 cups pumpkin purée
  • 3 cups vegetable broth
  • 1 cup coconut milk (plus extra for drizzling)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp ground cumin
  • ¼ tsp ground cinnamon
  • Salt and pepper to taste
  • Pumpkin seeds or sunflower seeds (for topping)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 min. until fragrant.
  2. Stir in the pumpkin purée, vegetable broth, coconut milk, cumin, and cinnamon. Bring to a gentle simmer and cook for 10-15 min., stirring occasionally.
  3. Use an immersion blender to blend the soup until smooth, or carefully transfer it to a blender.
  4. Season with salt and pepper to taste.
  5. Serve hot, drizzled with extra coconut milk and topped with your favorite seeds.
