Pumpkin Pancakes
Pumpkin pancakes are a quick, easy, and nutritious breakfast that brings the warm flavors of fall to your breakfast table. With the addition of pumpkin purée, cinnamon, and nutmeg, these pancakes are light, fluffy, and perfect for a seasonal morning treat!
Ingredients (for 4 servings):
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 1 cup milk
- ½ cup pumpkin purée
- 1 large egg
- 1 tbsp melted butter or oil
- 1 tsp vanilla extract
Instructions:
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, combine the milk, pumpkin purée, egg, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Heat a lightly greased non-stick skillet over medium heat. Pour ¼ cup of batter per pancake onto the skillet and cook for 2-3 min. on each side, or until golden brown.
- Serve warm with your favorite toppings like maple syrup, peanut butter, nuts, or a dollop of whipped cream.
