This rustic squash galette combines sweet roasted squash, rich caramelized onions, and tangy feta cheese, all wrapped in a flaky pastry crust. Perfect as a savory appetizer or light meal, this galette is as beautiful as it is delicious.
Ingredients (for 6 servings):
1 medium butternut squash, peeled and sliced into thin rounds
1 large onion, thinly sliced
1 tbsp olive oil
2 tbsp butter (for caramelizing onions)
1 tsp fresh thyme leaves
1 cup crumbled feta cheese
1 pre-made pie crust or puff pastry sheet
1 egg, beaten (for brushing)
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (200°C). Toss butternut squash slices with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 min. until tender and slightly golden.
While the squash roasts, heat butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized (about 15-20 min.). Add thyme and season with salt and pepper.
Roll out the pie crust or puff pastry on a parchment-lined baking sheet. Arrange the roasted squash and caramelized onions in the center, leaving a 1-2 inch border.
Sprinkle crumbled feta over the filling. Fold the edges of the dough over the filling, pleating as necessary. Brush the edges with beaten egg.
Bake for 25-30 min. until the crust is golden brown and crisp.
