Butternut Squash Galette

This rustic squash galette combines sweet roasted squash, rich caramelized onions, and tangy feta cheese, all wrapped in a flaky pastry crust. Perfect as a savory appetizer or light meal, this galette is as beautiful as it is delicious.

Ingredients (for 6 servings):

  • 1 medium butternut squash, peeled and sliced into thin rounds
  • 1 large onion, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp butter (for caramelizing onions)
  • 1 tsp fresh thyme leaves
  • 1 cup crumbled feta cheese
  • 1 pre-made pie crust or puff pastry sheet
  • 1 egg, beaten (for brushing)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C). Toss butternut squash slices with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 min. until tender and slightly golden.
  2. While the squash roasts, heat butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized (about 15-20 min.). Add thyme and season with salt and pepper.
  3. Roll out the pie crust or puff pastry on a parchment-lined baking sheet. Arrange the roasted squash and caramelized onions in the center, leaving a 1-2 inch border.
  4. Sprinkle crumbled feta over the filling. Fold the edges of the dough over the filling, pleating as necessary. Brush the edges with beaten egg.
  5. Bake for 25-30 min. until the crust is golden brown and crisp.
  6. Let the galette cool slightly before slicing and serving.
