Miso-Glazed Eggplant

Miso-Glazed Eggplant is a savory, umami-rich dish made by roasting tender slices of eggplant coated in a sweet and salty miso glaze. Topped with sesame seeds, this caramelized eggplant dish is packed with flavor and perfect as a side or over rice for a complete meal!

Ingredients (for 4 servings):

  • 2 medium eggplants, sliced into ½-inch rounds
  • 3 tbsp miso paste (white or yellow)
  • 2 tbsp soy sauce
  • 2 tbsp mirin (or rice vinegar)
  • 1 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp olive oil (for roasting)
  • 1 tsp sesame seeds (for topping)
  • Optional: chopped green onions for garnish

Instructions:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Arrange eggplant slices on the baking sheet and brush both sides with olive oil. Roast for 15 min., flipping halfway through, until soft.
  3. While the eggplant roasts, whisk together miso paste, soy sauce, mirin, sesame oil, and honey or maple syrup to make the glaze.
  4. Remove the eggplant from the oven and brush generously with the miso glaze. Return to the oven and roast for another 5-7 min. until caramelized.
  5. Sprinkle sesame seeds on top and garnish with green onions if desired.
