Cabbage Roll-Ups

Cabbage roll-ups are a comforting and hearty dish where blanched cabbage leaves are wrapped around a savory filling of rice, minced beef, and herbs, then baked in a rich tomato sauce. This traditional meal is perfect for a fall dinner with friends or family!

Ingredients (for 6 servings):

  • 12 large cabbage leaves
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 tbsp olive oil (for cooking)
  • ½ cup grated Parmesan (optional, for serving)

Instructions:

  1. Preheat the oven to 375°F (190°C). Bring a large pot of water to a boil and blanch the cabbage leaves for 2-3 min. until softened. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until soft. Add ground beef, cooking until browned. Stir in cooked rice, parsley, oregano, paprika, salt, and pepper. Mix well.
  3. Lay out the blanched cabbage leaves. Place a few tablespoons of the beef and rice mixture in the center of each leaf. Roll them up by folding in the sides and rolling from the bottom up.
  4. Spread a small amount of tomato sauce on the bottom of a baking dish. Arrange the cabbage roll-ups in the dish, seam side down.
  5. Pour the remaining tomato sauce over the roll-ups, covering them evenly. Cover the dish with foil and bake for 35-40 min.
  6. Optional: Serve with grated Parmesan.
