Vodka Sauce is a luxurious, creamy tomato-based sauce with a splash of vodka and heavy cream for added richness. It's perfect for tossing with pasta like penne or rigatoni, creating a comforting and flavorful meal!
Ingredients (for 4 servings):
2 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
¼ tsp red pepper flakes
½ cup vodka
1 (28 oz) can crushed tomatoes
½ tsp salt
¼ tsp black pepper
½ cup heavy cream
¼ cup grated Parmesan cheese
1 tbsp fresh basil, chopped (optional)
Instructions:
In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for 3-4 min., until softened. Add the garlic and red pepper flakes, and cook for 1 min.
Carefully pour in the vodka and cook for 3-4 min. allowing the alcohol to cook off.
Add the crushed tomatoes, salt, and pepper. Simmer for 15-20 min., stirring occasionally, until the sauce thickens.
Reduce heat to low and stir in the heavy cream. Cook for another 2-3 min. until the sauce is creamy and well combined.
Stir in the grated Parmesan and fresh basil (if using). Serve over pasta and enjoy the rich, creamy goodness of this classic sauce.
