These mashed potatoes are taken to a new level with the savory depth of brown butter. Ingredients (serves 6):
3 lb. Yukon Gold potatoes, peeled and cut into chunks
Salt, for boiling water and to taste
½ cup unsalted butter
½ cup whole milk, warmed
¼ cup heavy cream, warmed
Freshly ground black pepper, to taste
Optional: chopped chives or parsley, for garnish
Instructions:
Place potatoes in a large pot, cover with cold water, and add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce heat to simmer for 15-20 min., or until potatoes are fork-tender.
While potatoes are cooking, melt butter in a small skillet over medium heat. Continue to cook, swirling occasionally, until butter turns golden brown and develops a nutty aroma, about 3-4 min. Remove from heat and set aside.
Drain the potatoes and return them to the pot. Begin mashing with a potato masher or electric mixer.
